White powdery or crystalline. Relative density 2.534, melting point 880 ºC, boiling point 938 ºC. Colorless transparent crystalline or white crystalline powder. It is easy to dissolve in water, and its solubility is 6.23 in 100g water at 20 ºC. Its aqueous solution is alkaline and insoluble in alcohol.
It can react with metal ions. The pH value of its 1% aqueous solution is 9.9-10.7. It has the commonality of common polyphosphate, that is, emulsifying, dispersing, preventing lipid oxidation and improving protein binding. It also has the function of inhibiting food oxidation and fermentation at high pH value.
